I recently spotted a recipe by Nigella Lawson. She calls it Italian Tray Bake.
Looking for something hearty and simple, I decided to give it a try.
Here is my version:
On a sheet tray, combine some potatoes that you have cut into chunks.
Add some bone-in chicken thighs and some Italian sausage. She suggests 8 of each. I used what I had.
Sprinkle on some fresh rosemary sprigs, zest of one lemon, salt and pepper and 1/4 cup of olive oil
Bake at 425 for 50-60 minutes.
Simple. Rustic. Delicious.
