What to do with all of those Tomatoes?

What a crop of tomatoes we have had this summer!I have made everything from panzanella salad to slow-roasted tomatoes and yes, this delicious pasta dish.I simply added fresh basil, onions and capers and yes, all those tomatoes.

I will miss fresh tomatoes. Until next summer . . .

Glad you had a bumper crop! My son's plants did well too, they actually made a huge batch of spaghetti sauce for the first time:@)

Nothing taste like fresh home grown tomatoes. I've been eating my share of these all summer! It won't be the same, going to the grocery store and having to purchase hot house tomatoes. :)

The pasta dish looks so good. I was looking forward to having some tomatoes but my plant didn't produce anything so I ended up getting rid of it. :(
