Halloween Scarecrows

With sixty degree weather and sunny skies, I went for a much-needed walk to a hidden gem near my home.

My goal was to clear my head and experience God's beauty during my favorite season.

I went to see the most amazing dahlia show (more on that another time) but found these fun scarecrows while meandering through the various pathways.

I must make a point of visiting this place more often.

Bats and Cobwebs Halloween Dinner from Everyday Food

I love looking through some of my back issues of Everyday Food and while perusing the October 2006 issue, I came across a Halloween recipe called Bats and Cobwebs.

You have to use your imagination here but the bats are farfalle (bow tie) pasta and the cobwebs are mozzarella.

Here are the ingredients:
The recipe:The adjustments I made to the recipe are as follows:
* I doubled the recipe. Leftovers baby!
* I added some sliced onion to the recipe.
* I can never have enough garlic so I added a few more cloves.
* I added a pinch of red pepper flakes.
* Instead of chicken sausage, I used sweet Italian sausage.

This recipe was a fun, albeit far-fetched interpretation of bats and cobwebs.

It tasted okay. Not crazy good, just good.

In the future, I would not use whole tomatoes but crushed tomatoes. It was a bit watery and not as sauce-like as I like it.

Let me know what you think should you choose to make this for Halloween or any day.

Help! I need Nancy Drew for The Case of the Missing Vases

Growing up, I was a huge fan of Nancy Drew.I could not get enough of her mysteries and I reflect fondly of that time in my life.

Here we are in 2011 and I wish Nancy Drew were on my case of the missing vases.These vases are so sexy that I knew when I saw them earlier this year at one of Michaels after-Christmas sales at something like 70% off, I had to have them.

They would look lovely with my Fall decor however, I CANNOT FIND THEM!

I am sure they are somewhere but they should be with my Fall decor. They are not.

Ms. Drew, can you help me find them after you solve the secret of the old clock or the clue of the broken locket?

Classic Chicken Pot Pie courtesy of Pillsbury

I don't roast chickens often. I really should though since they always turn out so delicious.

But feeling in a nesting mood, I made one. What to do with all of the leftovers?

Why, Chicken Pot Pie of course!

Mind you, I have never made chicken pot pie. I have always found it too daunting to make.

I don't remember my mom ever making it when I was growing up; maybe a TV dinner or two. It wasn't something on an Italian mom's repertoire.

That all changed when I found this recipe on the Pillsbury website. And, I had all of the ingredients!

I really need to get one of those pie crust thingys rather than use aluminum foil. Does anyone know where I could get one?

This really was delicious.

In addition to the recipe's ingredients, I added some Old Bay Seasoning since I thought it would be bland without a little sumthin' sumthin'.

Now, I can officially say that I can make me some Chicken Pot Pie!

Robert H. Treman State Park Ithaca, New York

The Finger Lakes Region of New York is just gorgeous.

Robert H. Treman State Park is so breathtakingly beautiful. There are so many different layers to this gorge with 12 waterfalls. Surprises around every corner.

The area is home to SUNY Cortland, Ithaca College and Cornell.





Ithaca is Gorges and God is good!

Rice and Lentil Stuffed Peppers

I remember fondly my mom's stuffed peppers. I haven't made them since her passing, 20 years ago.

It was time.

Rather than make them how she did stuffed with chopped meat, I found a recipe for Stuffed Peppers with Rice and Lentils.Ingredients:The stuffing:
Alterations to recipe:
1 - I used canned mushrooms instead of fresh.
2 - I used Arborio rice instead of long-grain rice.
3 - I used plain old lentils instead of red lentils.
4 - Always, more garlic than what is listed.
5 - Stuffing tasted a bit bland so I added some Locatelli Romano and a pinch of red pepper flakes - I am Italian after all.

Verdict: Not like mom's. While delicious, it wasn't savory enough for me. Next time, I will make mom's.
