It was time.
Rather than make them how she did stuffed with chopped meat, I found a recipe for Stuffed Peppers with Rice and Lentils.
1 - I used canned mushrooms instead of fresh.
2 - I used Arborio rice instead of long-grain rice.
3 - I used plain old lentils instead of red lentils.
4 - Always, more garlic than what is listed.
5 - Stuffing tasted a bit bland so I added some Locatelli Romano and a pinch of red pepper flakes - I am Italian after all.
Verdict: Not like mom's. While delicious, it wasn't savory enough for me. Next time, I will make mom's.

This does look delicious - but I know *just* what you mean about your mum's tasting better. Even if I follow the exact recipe my mum uses, it doesn't taste the same. Grr!!
