Classic Chicken Pot Pie courtesy of Pillsbury

I don't roast chickens often. I really should though since they always turn out so delicious.

But feeling in a nesting mood, I made one. What to do with all of the leftovers?

Why, Chicken Pot Pie of course!

Mind you, I have never made chicken pot pie. I have always found it too daunting to make.

I don't remember my mom ever making it when I was growing up; maybe a TV dinner or two. It wasn't something on an Italian mom's repertoire.

That all changed when I found this recipe on the Pillsbury website. And, I had all of the ingredients!

I really need to get one of those pie crust thingys rather than use aluminum foil. Does anyone know where I could get one?

This really was delicious.

In addition to the recipe's ingredients, I added some Old Bay Seasoning since I thought it would be bland without a little sumthin' sumthin'.

Now, I can officially say that I can make me some Chicken Pot Pie!

It looks great Carmie! Pot Pie is one of my sons favorites! The pie crust thingies will probably be at Walmart soon, I've seen them at HomeGoods too. They usually come out in the fall, have fun:@)

Chicken Pot Pie is definitely one of those cooler weather comfort foods. I make a mean one too, but it's never quite the same since what goes in is what I have around. I notcie you have corn in yours. I've never done that, but it looks great.

Looks amazing! And definitely in time for the cooler weather. Amazon has Mrs. Anderson's pie crust shields, they work really well! I use the aluminum, but they also make silicone.

Your Chicken Pot Pie Looks deLish! It turned out so pretty with that golden crust (the best part of chicken pot pie, I think).

I've never made one of those...I never felt quite comfortable making a homemade crust as some of the recipes have called for BUT with Pillsbury, I think I might give it a try!

Mmmmm....sounds good! I know what I'm making for supper tonight!!! I make a simple, very runny biscuit dough batter and pour it on top of everything and bake it til set and light golden brown!!!

Hi Carmie, the chicken pot pie looks absolutely delicious and if it weren't close to bedtime I could eat a portion, LOL The only other pot pie that I like is from Swiss Chalet here in Ontario. Yummy! I make potpie with leftover turkey at holidays. Sometimes frozen vegetables and sometimes canned.I use a can of cream of chicken soup and if there's any gravy left over, I put a little of that in too.
